Veggilicious Lentil Soup

serving size: about 8

lentil soup

– 1c. of dry lentils
– 2 quarts and 3 c of water
– 1c of chopped spinach or kale
– 1 zucchini (pureed or diced)
– 1 yellow squash (pureed or diced)
– 1/2c of carrot (shredded or chopped)
– 1/2c of celery (chopped)
– 1 /2c of onion (chopped) 
– 1/4 c of fresh parsley (chopped)
– 1 can of diced tomatoes (unsalted) (optional)
– 1 sweet potato (diced) (optional)
– 1 tsp of cayanne pepper (more if you prefer a kick)
– 1 tsp of groud oregano
– 1 tsp of cumin
– 1 tsp of pepper
-pinch of salt


1.  Bring 2 quarts of water and lentils to boil for about 30 mins or until lentils are cooked

2. In a separate pot bring veggies to boil in 3c of water for 20 mins or until veggies are tender

3. Pour the lentils (with the water) into the pot with veggies, add spices, and allow to simmer for approximately 30 minutes. Add more water depending on your preference of texture.

4. Top with some pepper flakes and ENJOY 🙂
